Grapevine is one of he major fruit crops worldwide and the wine industry is one of the main components of the agrofood sector. Viticulture and enology also are at the basis of the economy of many and extended areas in the world due to their complex linkages with cultural, historical, artistic, and gastronomic values and activities.
The quality of grapes and wines is essentially linked to their content of macromolecules and secondary metabolites. The incredible diversity of these substances gives rise to an extended panorama of flavours and aromas which characterize wines. In addition, the relevance of these substances is increasing for their uses in medicine and cosmetics.
Macrowine 2010 will be the forum where the biosynthesis, characteristics, analytical properties, and modifications during wine production and aging of macromolecules and secondary metabolites of grape and wine will be discussed.
Macrowine 2010 is the third of a series of meeting started in 2006 which have become increasingly successful, gathering more than 200 scientists from 20 countries inside and outside Europe. It will take place in Torino, at the heart of a region of Italy which has an historical and economically very successful tradition of high quality viticulture and winemaking, based in particular on red varieties and wines.
